Banquet chalne ka time pe sir aate hay aur kahete hay kitchen wale ko "aaray bhai furti la kaam me ,khana chod jaldi ,jaldi...a babu pick up karo".suru ho jate hay kaamke teji bhab.ledke sare boost ho jate ,sir Ki motivation ke karan .me personali sir ke karib hu ,pata nehi G.M sir bada pasand karte the mujhe !


31st december ,new year night ,dhua dhar kaam hote hay yis din ,Delhi Ki mashur textile company booked kiye hay hotel .Guest unke, food drinks aur service humare .sabhi ledke pura tayer hay yis din ke liye .bahut tips milte hay ek raat me,kamai hay hotel Ki lakho me aur staff Ki kamai hoga hazaro me .

Duty roaster ready Kar liye maine,G.M sir se check Kara liya maine .G.M sir mere saath aur executive Chef ke saath baith ke menu bhi ready Kar liye . Aab ready hay hum sab aajki function ke liye .subhe 10am me pohuch gaye hotel me.G.M sir aa gaye 11am bajte hi . har banquet hall me woh khud ja ke check Kar rahe the set-up.

Raat badte gaye,guest aana suru ho gaye.Cream of the Delhi hazir hay aaj Humare Hotel me.Hospitality industry wait karte hay aisi guest o ke liye.Ji aaj hi woh din hay .chal raha  hay snacks,saath me drinks .luxary car bhar gaye hotel Ki parking . Bathroom jana bhul gaye hum ,kaam ke pressure me .

Basement Ki banquet Ki party me 500 rupiya ke note ud raha hay .music aur songs chal raha hay mashur logo Ki .participate in these party a bunch of celebritys also .Expensive wine khula hay yis party me .kuch junior staff abhi se tul hogaye .pata nehi kab tak in sabko handle Kar paunga.

At last raat ke do baje inka party khatum hua .Jyada guest tha in toxicated.staf bhi bahut sare tul hay .me aur do chaar aur staff sirf thik hu.G.M sir regular drinks lete hay 8bajte hi .aaj abhi tak kuch liya nehi.paani aur tea le raha tha.maine snacks bhejbaye the ,lekin unhone waas Kar diye .

31st ke night ko ,sir office Ki table ke upor basmati rice rakhte the chuda karke,usme ek mithai,kuch note aur ek batti jala dete the who pakka 12 bajte hi,jab light off kiya jate hay ek minute ke liye .Sir mujhe bulaye office me. mujhe bola wohi kriya karne ke liye .me haath dho ke sir ke batay Hua kaam kriya,unhone pranam tak nehi kiye......

Naye naye  New Delhi ki yis star hotel me join kiya maine,f&B manager ki .Energy bharpur tha ,kuch jyada karne ke liye .Naturally Md ki nazar me aaye the hum .Har srevice me Tapas ki jarurat unko aur G.M sir ko padna chalu ho gaye .Mujhe dayityo  deke nischint rahe sakte the woh .

jaise yisbar ek Mumbai se aa raha hay babaji .Umar 30 ke ander,lekin popularity bahut dur dur tak hay unki .Baba ji asan,pranayam aur aurvedic jodi buti se kamaal kar raha tha woh!Bidesh me bhi unki bhakt mandali hay.Babaji yis mahine ki pandraha tarikh se delhi tour me honge .

Humare M.D log(5M.D,unki 5 biwia,saath me 10 bachche)  unke bhakt mandali me aate hay.Hotel ki sabse sera suit unke liye booked ho gaye .Chandrama banquet hall booked hay Babaji jo anusilan karayenge uske liye .Harwakt paise,paise karne wala log bawaji,bawaji me transfer hogaye !Itne bhakt log aana suru huaa ki mujhe laga delhi Haridwar ho gaye !!!


Me chota sa saher se aaye hay ,Babaji ki entrance dekh ke chakit rahe gaye ,car ki convey,fulo ki har ki pahad aur ful ki pankhdiyo ki chirakna ,mujhey hayran kar diye .Jitne aaye sabhi ne safed kapda pahenke aaye,laag raha tha Ghadi dittergent ki ad chal raha hay .Babaji bakei sunder aur khubsurat tha,sabse badiya tha unke hansi.

Me Hotel me rahe gaye,wake up call lagaye reception ne mere liye sade teen baje.me kitchen ko bola Babaji ki sabhi room me bed tea poucha do jaldi jaldi.Ek room boy ko leke Garum paani,Honey ki bottle,ek kela aur chey pcs almond leke me poucha Babaji suit me.

Security wale kuch bole nehi woh log bhi ready hogaye ,-chay pia ,me pucha un logo ko .sabhi ne sammati janay,ki chay piliya.ander gaye suit ke ,awaz na karke room boy ko ishara kiya saman table me rakhne ke liye,aur fir ishara kiya use jane ke liye .darwaza bandh karke room boy nikal gaye.Bath room ki darwaza khula tuk karke ,awaz hua.Gerua kapda pahen ke nikla --Babaji-lekin a kya unka sar pura mundit hay---

Me mamuli sa job karne wala banda hu.Hotelier logo ko kitna kuch raaz ke bare me malum hota,woh thodi hi jate use viral karne .Me unko bola tha --'Babaji me service industry me hu ,service ke alaba dusre kisi me mera interest nehi hay .'Haath pakde mere Babaji-"jab bhi kuch jarurat ho to phone karna".Pichle 17 years Babaji ko la nehi paye unke hotel me ,mere M.D log.

शिव नंदन चुघ- हमारे होतेल की चीफ आकउंटेंट है। में और शिव जी एकी उम्र  के थे। हमारे होटल है पश्चिम डेल्हीके इस कम्युनिटी हॉल के पास ,शिव जी के घर था सुभाष नगर में। हम दो चार बार उनके घर गए थे। शिव जी की पिताजी भी अकाउंटेंट की जॉब करतेथे ,माँ और उनका बीवी ठी हाउस  वाइफ। अपना माकन था उनका सुभाष नगर में। शिव जी की बीवी प्रेगनेन्ट थी।

शिव जी को देखते ही आपको आपने आप रेस्पेक्ट आएगा। शुवे ऑफिस आते है नाहा के ,माथे पे लाल टिका लगा के। क्लीन शवेद होते है वह। बहुत धीरे बाते  करते है। कभी गुस्सा देखे नहीं। किसी के भी एडवांस ये लोन चाहिए तो सिद्धा शिव जी के पास जाते है और वह कोई न कोई हल निकल देते है। आज सुभे आठ बजे शिव जी ने फ़ोन किये। पूछे कितने बजे ऑफिस आ जाऊंगा ?



में तीन सरे तीन बजे ऑफिस आ जाते है ,और ऑफिस से घर वापस होते होते रात के दो बजते है। ये तो शिव जी को मलूम है फिर भी जॉब पूछा, तो कारन कुछ होगा ही। -"आप कितने देर में ऑफिस पोछोगे ?"
उन्होंने बोलै -"आधा घंटे में ".
-ठीक है ,में दस बजे ही आ जाते हु।


दस बजे- ऑफिस पौहच गए में ऑफिस में। शिव जी को फ़ोन किये -"सर आजाओ ,में पहुँच गए।"थोड़ी देर में शिव जी आगये मेरे ऑफिस में ,कॉफ़ी बोलै था में,कॉफ़ी पीते पीते ,में पूछा -क्या बात है शिव जी ,कोई बड़े गोलमाल ?
शिव जी बोले -"सर,चोरी हुआ ,रेस्टोरेंट में। बहुत दिनों से चल रहा था ,काल पकड़ में आये। "में उनके तरफ देखने लगे तो उन्होंने फिर बोले ---"होम डेलिवरी के कॅश सेल को कार्ड में दिखा के ,कॅश जैब में ले लिए।"
-'कौन है सर इसमें?"
-सर ,कॅश के लोरिना और एकाउंट्स के चटर्जी है  !लोरिना कॅश उड़ाया और चत्तेर्जी उड़ाए बिल।
-और कोई है ?
-सर,मेरे नज़र में तो है नहीं ,फिर भी आप थोड़ा छान बिन करो।
-जी.एम् सर को बताना पड़ेगा पहले। सर आये क्या ?
--थोड़ी देर में आ जाएंगे,काल की सी सी टीवी चेक करो सर ,दो बजे की। ...
चेक किये तो दखाई दिए ,की लोरिना हाथ में मुठ्ठी करके रूपया लिए और फिर आपने ब्लाउज में डाला। राठोड  सर के पास गए  शिव जी  और में। सर को डिटेल्स में सब  बताये। फिर सी सी टीवी के फुटेज भी दिखा ए। सर बोलै -"पहले लोरिना को बुलाओ।"थोड़ी देर में लोरिना आये।
सर ने सुरु किये,- लोरिना काल सात हज़ार के एक कॅश पेमेंट में होम डिलीवरी था ?
-कौन सा होम डिलीवरी सर ?
--ज्यादा स्मार्ट होने की जरुरत नहीं है ,सात हज़ार के डिलीवरी एक ही था। उसे तुम कार्ड में दिखाई  हो। और कार्ड की सेल को पूरा गयेब ,कर दिए ?
--नहीं सर,ऐसा कुछ नहीं ,हो सकता है मिस्टेक करके कॅश को कार्ड दिखा दिए। ...
--तो फिर कॅश कहा है ?
--नहीं मतलब--
--लोरिना ,सर बोले ,आज अभी तुम निकल जाओ होटल से ,न तो तुम रेसिग्नेशन दोगे ,न तुम्हे हम फायर करेंगे।
लोरिना रौ पड़े ,सर में....
--कुछ मत बोलो ,सीधा निकल जाओ ,नहीं तो पुलिस आएगा ,कोर्ट केस होगा ,बदनामी होगी।
--सर। ... कुछ बोलने की कोसिस की लोरिना। ....
--सर बोले ,मुझे कुछ सुनना नहीं ,शिव लोरिना की 34 देस के एब्सेंट विथ आउट नोटिस के होते ही ,तुम इसको नोटिस देना, . अब इसके जुडी देर चटर्जी को बुलाओ। ...
चटर्जी का हल भी सैम हुआ। सर अब मुझे बोले-- भत्ता तुम्हे आधा घंटा देता हु, गेम प्लान रेडी करो ये चोरी रोकने की।
होटल इंडस्ट्री में खाना ,दारू और पैसा बहुत ही आसानी से मिल जाते है। बेशक आप बैंक्वेट ,बार ,रूम ,ये रेस्टोरेंट पे काम करो। ऐसे नहीं की होटल वाला प्रोवाइड करते है , फ्लिकिंग से   दारू और पैसा जुगाड़ करते है स्टाफ,सभी नहीं ,फिरवी ज्यादा ही ऐसे करते है। चोरी रुकना ही है। और तरीका है ------

 4 बजे ब्रीफिंग के टाइम पे रेस्टोरेंट पे सबको बुलाये ,स्टुअर्ड,कप्तान इवन सीनियर कप्तान को भी बुला लिए में।शुरू किया मैंने --आज एक  चोरी करने की टीम  शिव जिकी बजा से  पकड़ा गए ,होटल की कमाई के  साथ में आप लोगो के कमाई भी लुटते  थे ,किउ की उस रेवेनुए के साथ आप लोगो के टिप भी होते है। उन दोनों ने सिर्फ आपने लिए सोचे ,पिछले छे साल की जमा पैसे भी रुक जायगा उनके। घर  वाले को क्या जवाब देंगे वह?
---आज से इस  नियम लागु  होगा -नम्बर  एक -बिल फोल्डर हमेसा  खली रहे गा ,गेस्ट के टेबल से आने के बाद। कोई पुराने बिल अगर उसके अंदर कप्तान  को मिला तो  एक पॉइंट डेबिट होंगे उस स्टुअर्ड की जो सर्विस किये थे।
नम्बर दो अगर मेरे चेकिंग के टाइम मुझे बिल फोल्डर में पुराने  बिल मिले गा तो - सीनियर कप्तान ,कप्तान और स्टुअर्ड की एक पॉइंट करके सबकी टिप्स डेबिट होंगे।  कोई भी बिल अगर दस मिनट से ज्यादा टाइम पे  होगा तो केशियर उसकी एक पॉइंट टिप्स  खोएगा। चोरी एनी की गलत तरीके की कमाई आपके सुख,चयन  और रेस्पेक्ट को हानि करेगा ,इससे दूर रहिये !

मई जनता हु की अच्छे  लोग संख्या में ज्यादा है दुनिया में ,कुछ बुरा  लोगो की लिए आपने अच्छाई दबा मत दीजिये। हमारे नज़र आज से और ज्यादा रहेगा आप लोगो की ऊपर ,अच्छा रहिये ,सन्मान से जीते रहिये।

ऐसे कंट्रोलिंग सिस्टम के सहारे में ,मैंने सभी होटल को चला ते थे। और अभी इस तिस साल तक मेरे नौकरी लाइफ में दुबारा कोई चोरी न हो पाए। इसको कभी मॉडिफिकेशन  की जरुरत पड़े तो किया मैंने। लालच से दूर रहना होटल मैनेजमेंट की एक शिख है। में जब ये सरे काम कर रहा था शिव जी मेरे साथ थे ,उनका मुँह बिलकुल शांत था।

होटल इंडस्ट्री की जब करके मैंने आदमी की अजीब सा कैरेक्टर  देखे है ,लोरिना ,चटर्जी के साथ कितने  अच्छे टाइम बिताये ,लेकिन कभी सोच नहीं पाए ये दोनों चोर है!दोनों के जाने के बाद ,जब स्टाफ डाइनिंग में जातेथे तो ,दोनों की कमी नज़र आता था। आपने घर से भी ज्यादा टाइम हम ऑफिस को देते है ,अनजाने में स्टाफ एक दूसरे की हमदर्द हो जाते है। लेकिन इसमे भी एक दो अलग रहे ही जाते है। ......

 Mr. चुघ होटल छोड़  दिए इस साल --- बैंक्वेट  की चार पार्टी की पेमेंट जो बैंक में जमा होते थे वह जमा हुआ नहीं  ,पेमेंट जमा  करते थे Mr.chugh ...

It's my personal opinion that-hospital management course can provide a 98% job, for its students. Even though they, who study hospitality management they can easily maintain and manage any human resource department. I have some proven examples also. a lady of Kolkata,75 years, is operating a restaurant nicely, total turn over is about 4croe.


I love to present this example --Mr. Rajiv Hari Om Bhatia is a renowned personality of India, was coming from the hospitality industry, he was a good chef. His talent boost by our hospitality industry. His total work proves- how human is his work? Did you get that person? Akshay Kumar the great Hindi film star. He is also the product of the hospitality industry.


Accounting, Administration, Finance, Information systems, Marketing, Human resource management, Public relations and Strategy.

Hospitality refers to the relationship process between a guest and a host, the reception and entertainment of guests, visitors, or strangers, with liberality and goodwill.

 It also refers to the act or the practice of being hospitable, that is, Hospitality offers a job those changes all the time. It is a fast-paced environment where you are doing varied tasks each day. You are on your feet and moving around a lot which helps you think, feel, and react better. You can use your humanity better and better.

Mr.Mukherjee was our accounts staff when I work in this Kolkata hotel. In his leave days taking a lot of Hilsa fish, mutton curry and of course fresh prawns because he went to his nephew marriage parties. Now he joined office on time but with severe breathing trouble. Within an hour, he was suffering from chest pain and sweating. In the morning every one of the hotel staff was busy and the staff was less number for the morning shift .

When I heard that, I came to him and saw his breathing trouble and too much sweating, I took the decision -call the driver, but he was absent, he went to pick up staff. Call Uber or Ola but they are not responding in that time, Yellow taxi of Kolkata in a strike nowadays!I asked a utility staff for his motorbike,pick up Mukherjee in between Ravi the uty staff and me. I went to the strait SSKM hospital emergency department. Hats of to Doctors and other staff, treatment started immediately.

Mr.mukherjee was saved from cardiac failure,as per doctor opinion. His family member was coming in PG hospital quickly.I love and respect all of my coleagues.Mr.Mukherjee within a weak join office. His family gives me a lot of good words and tears of course, and the good news is that--Ravi got a challan from Kolkata traffic police, for his overriding and without helmet riding on 10th march at 10:50 am!

It was my study time,I took admission in IIMC for Hotel Management course.St.Xavier's campus was our classroom.In a style, we are talking about that area to others. Chinu my best friend lives in Ashok Nagar, my classmate he was. Now he teaches in a catering college in Salt Lake. Actually, he was an operational Manager of Hotels in Mumbai, but suffering from high sugar and gastric ulcer he quit hotels and preparing Management staff in this Institute.when we came out from our campus and running for our last bus, he shouted-- Tapas, at what time tomorrow you reaching in xaviers....


  I am regularly coming from Andul. First by train then by Bus or by Tram, I reach my Management college. Ma gives me Fifty rupees for monthly ticket and five rupees daily for my bus fare and Hi-tea, no extra money will be provided to me. This heavy amount (five rupees)is precious to me and I am using this money with my controlling knowledge, which is getting from my institute by Mr.Bhar who teaching us  Management Control. I started care of fuly cost cutting in my experience. sometimes I was attacked by def ness, bus conductor asks me three-four times for ticket, then I give him bus fare. Sometimes I was walking from St.xaviers college to Howrah station for good health and the next day, I through tea party to my friends in college cantin.

    Now, I was in contradiction mood this Month, because of an awesome movie released in Jyoti cinema hall. All of my friends were enjoyed that movie, they are discussing in front of us and we are, means -only me and Chinu was not seeing this movie.Chinu provoked me, Tapas at any cost we watched that
movie, otherwise, they spread Gamacksin(a bad odor chemical powder) on our prestige. But how I manage money for tickets? lastly, it's decided that I am not purchasing Railway monthly this month, I spend twenty rupees from there and Manage whole month by without ticket,10 days at least. I managed my southeastern checker and Chinu manage their Eastern railway's Ticket Checker?

  The first time we listen to the Dolby sound system and 70MM movie. That day when we were watching a movie that time what was our filling, I can't explain that. Now when we watching Movie at Cineplex, I didn't find out that fillings, truly. Anyhow, after watching the movie and discuss that scene by a screen with friends, with tea and Chota sutta, a little fear started in my mind...God, please save me from the T.T.I am not worried about today, because I buy a train ticket to day, I am worried about tomorrow when I will be a without ticket then? Nothing bad happens this time, today is the last day of my without ticket life. Tomorrow is the 1st day of the month and Ma give me money for Monthly ticket, so I purchase monthly immediately.

But 1st of the day ,i go by Bus for some reason and when back from college i saw the train standing on platform and just to leave, so i ran to catch the train and i got it.Its a  super fast train,first stopage is Andul.When i am stable in compartment ,i saw there was a bunch of ticket chacker and they guard near the door,they were the chacking ticket.I was panicked,feel nervous for a moment,certainly i got sense and i am calmly go to the bathroom,already there was two,three passangerswho take shelter,i was number three,shut the  Bath room door,but these ticket chakers were dared to fulfill their target.

..So they knock the bathroom door and called to came out us and also they said if we are not out they broke the door also. So one by one we were coming out from the bathroom. They asked where is my ticket?i was holding my expired monthly ticket, its absolutely wet in water, I took that monthly ticket under the bathroom tap water, when its wet, I hold it with my two fingers, hanging in front of the ticket checkers and very politely, I spoke to them--"sir, its drop in to the Bathroom pan, when I was pee........the ticket checker was said quickly," its o.k,o.k, keep it in your pocket and go to your seat."
